MADE WITH RICED CAULIFLOWER

Chop up some salad and herbs and hey presto! You've got yourself a super healthy side or main that's ready in minutes. Enjoy solo or serve with halloumi/your choice of protein.

Ingredients:

  • 1 Pouch Fullgreen Riced Cauliflower
  • 50g parsley - finely chopped
  • 10 mint leaves - finely chopped
  • 2 green onions - finely chopped
  • 2 medium tomatoes - deseeded and diced
  • 2 tbsp pomegranate seeds
  • 2 tbsp olive oil
  • 1 tbsp pomegranate molasses
  • Juice of 1/2 lemon

Method:

  • Add the chopped parsley, mint and spring onions to a bowl
  • Add the diced tomatoes and pomegranate seeds
  • Open the cauli rice pouch and add to the bowl - there's no need to heat!
  • To dress, mix in 2 tbsp extra virgin olive oil, 1 tbsp pomegranate molasses, the juice of half a lemon, a good pinch of sea salt and a few grinds of black pepper
