Speedy Kimchi Cauli Rice

MADE WITH RICED CAULIFLOWER
This gut-healthy meal by @talldadtinykitchen is perfect for using leftovers up from the fridge. Enjoy it during the week or meal prep it for a super-healthy lunch to go.
Ingredients:
- 1 Pouch Fullgreen Riced Cauliflower
- 100g red cabbage (finely sliced)
- Half red pepper (diced)
- 3 green onions (sliced)
- Juice from 1 lime
- 1 tsp sesame oil
- 2 eggs
- 2 tbsp Kimchi
Method:
- Heat some oil in a pan and add the garlic and onion, stir fry until softened
- Add the cabbage, red pepper, carrots and chilli to the pan and stir fry until cooked, adding the soy sauce and sesame oil for the final few minutes
- Add the cauli rice and gently stir until everything is nicely coated
- In a separate pan, fry the eggs
- Add the cauli rice to the plates, top with the egg, kimchi and some chopped green onions to garnish
