Ingredients

  • for BLINIS
  • 1 pack of Fullgreen Broccoli & Cauliflower Rice (200g / 7oz)
  • 1 large Egg
  • 50g / ½ cup of Maize Flour
  • 25g / ¼ cup of Shredded Cheese (we suggest Comté)
  • Salt & Pepper
  • for TOPPING SUGGESTIONS
  • Crispy Air-dried Spinach
  • Salad Leaves
  • Soft-boiled Eggs
  • Roasted Sweet Potato Chunks
  • Pumpkin Seeds or Salad-toppers

Method

  1. 1 for THE BLINIS
  2. 2 Simply mix the Flour, Egg, Shredded Cheese and Cauli Rice in a bowl. Then season with Salt & Pepper.
  3. 3 Heat a little oil in a skillet over medium-low heat. Cooking two blini at a time, spoon the batter onto the heated skillet.
  4. 4 Cook until bubbles form (1 or 2 minutes). Then flip and continue cooking until lightly browned.
  5. 5 Move to a paper towel-lined plate whilst waiting to serve.
  6. 6 for SERVING SUGGESTION
  7. 7 Add Lambs Lettuce, Fresh Spinach or your favorite salad leaves to two large bowls
  8. 8 Place your perfectly cooked Blinis in the center of each bowl and perch an oozing soft-boiled egg on top.
  9. 9 Sprinkle with Pumpkin Seeds or Salad-toppers and a light Vinaigrette (or simply some Lemon Juice). Then season with Salt and Pepper.
  10. 10 We like to add Sweet Potatoes to our salad bowls but this requires a bit more prep... First, chop-up one large Sweet Potato into equal-sized cubes. Toss in a little oil and season with Paprika. Then cook at 425°F / 220°C for 30-35 minutes, turning every 10-15 minutes to prevent them burning.
