Cheesy Cauliflower Croquettes made with Fullgreen Cauli Rice

Ingredients

  • 2 packs of Fullgreen Cauliflower Rice (400g / 14oz)
  • 1 Onion, diced
  • 1 clove of Garlic, minced
  • 1 large Egg
  • Panko (or Gluten-free Breadcrumbs)
  • Plain Flour (or Gluten-free Flour)
  • ½ cup of Manchego or Mozzarella cheese, shredded
  • 1 tsp Italian Seasoning
  • A little Olive Oil
  • Salt & Pepper to taste

Method

  1. 1 Sauté the Garlic and Onion in a little Olive Oil until soft and fragrant.
  2. 2 Turn-off the heat and add the Cauliflower Rice. Mix it together and season with, Italian Seasoning, Salt and Pepper.
  3. 3 Let the mixture cool a little, in a separate bowl, before adding the Mozzarella, Manchego - or your preferred cheese.
  4. 4 Now roll the mixture into 8 balls and place them on a baking tray lined with Parchment Paper.
  5. 5 Now you'll need 3 more bowls: In one, crack an Egg and whisk it. In the next bowl, add a little Flour with Salt & Pepper. And, in the third bowl, add Panko/Breadcrumbs.
  6. 6 Roll ball at a time... First through the flour, then the Egg mix, then the Panko/Breadcrumbs. Place each finished ball back in the baking tray.
  7. 7 Preheat the oven to 400°F / 200°C and bake for 10 minutes, flip, then bake for another 10 minutes. If you're using an Air Fryer, set it to 400°F/200°C and cook for 10-15 minutes.
  8. 8 Once the croquettes are golden, serve with Romesco, a Marinara sauce or Hummus - and Enjoy!
