Ingredients
- 2 packs of Fullgreen Cauliflower Rice (400g / 14oz)
- 1 Onion, diced
- 1 clove of Garlic, minced
- 1 large Egg
- Panko (or Gluten-free Breadcrumbs)
- Plain Flour (or Gluten-free Flour)
- ½ cup of Manchego or Mozzarella cheese, shredded
- 1 tsp Italian Seasoning
- A little Olive Oil
- Salt & Pepper to taste
Method
- 1 Sauté the Garlic and Onion in a little Olive Oil until soft and fragrant.
- 2 Turn-off the heat and add the Cauliflower Rice. Mix it together and season with, Italian Seasoning, Salt and Pepper.
- 3 Let the mixture cool a little, in a separate bowl, before adding the Mozzarella, Manchego - or your preferred cheese.
- 4 Now roll the mixture into 8 balls and place them on a baking tray lined with Parchment Paper.
- 5 Now you'll need 3 more bowls: In one, crack an Egg and whisk it. In the next bowl, add a little Flour with Salt & Pepper. And, in the third bowl, add Panko/Breadcrumbs.
- 6 Roll ball at a time... First through the flour, then the Egg mix, then the Panko/Breadcrumbs. Place each finished ball back in the baking tray.
- 7 Preheat the oven to 400°F / 200°C and bake for 10 minutes, flip, then bake for another 10 minutes. If you're using an Air Fryer, set it to 400°F/200°C and cook for 10-15 minutes.
- 8 Once the croquettes are golden, serve with Romesco, a Marinara sauce or Hummus - and Enjoy!
