Ingredients
- 1 pack of Fullgreen Cauliflower Rice (200g / 7oz)
- ½ lb / 225g of lean Chicken mince
- 2 Gem Lettuces
- 4oz / 100g of Shiitake Mushrooms, chopped
- ½ large Onion, diced
- 2 Spring Onions, sliced
- 2 Garlic Cloves, minced
- 1 tsp of Chinese Five Spice
- 1 tbsp of fresh Ginger, grated
- 1 large Carrot, shredded
- 4 oz / 100g of canned Water Chestnuts, drained and halved
- 2 tbsp of Hoisin Sauce
- 1 tbsp of Soy Sauces
- 1 tsp of Chilli Flakes (optional)
- ½ tbsp of Toasted Sesame Oil
Method
- 1 Preheat a non-stick frying pan or wok over a medium/high heat - with a little Sesame Oil.
- 2 Add the chopped Shiitake Mushrooms, Garlic and chopped Onion and cook for 3 minutes, or intil the Onion turns translucent.
- 3 Add the Chicken mince, Soy Sauce, Five Spice and Chilli Flakes (if you fancy). Remember to break-up the Chicken as it cooks.
- 4 Stir in the fresh Ginger, shredded Carrot, Water Chestnuts and Spring Onions. When they've cooked for 2 minutes, add the Hoisin Sauce
- 5 Stir well, turning the heat down a little and allow the flavours to coat everything and the sauce to thicken.
- 6 Meanwhile wash and seperate (and dry) some Lettuce leaves. Also microwave a pack of Cauli Rice as per pack instructions.
- 7 Serve the Lettuce on a platter alongside the Hoisin Chicken and Cauli Rice, so everyone can build their own wraps.
- 8 It's always nice to bring a little extra Hoisin and Soy Sauce (and maybe even some crushed peanuts) to the table too...
