Ingredients

  • 1 Pouch Fullgreen Riced Cauliflower
  • 1 ripe mango, sliced into 1 inch cubes
  • 3/4 cup full fat canned coconut milk, divided
  • 1 1/2 Tbsp chia seeds
  • Pinch of salt, to taste
  • 2 Tbsp maple syrup
  • 3 tbsp Unsweetened Coconut Flakes

Method

  1. 1 Microwave the cauliflower rice according to instructions and add to a bowl with the chia seeds.
  2. 2 In a separate bowl mix the coconut milk and maple syrup until combined.
  3. 3 Pour the sweetened coconut milk over the cauli flower rice and chia seeds and give it a good mix. Once combined, split into two serving glasses and let sit for at least 4-6 hours, preferably overnight.
  4. 4 When you're ready to eat, remove from the fridge (adding a little extra coconut milk if you like to loosen the mixture).
  5. 5 Top with the mango and coconut flakes, enjoy!
