Ingredients
- 2 packs of Fullgreen Cauliflower Rice (400g / 14oz) 2 packs of Fullgreen Cauliflower Rice (400g / 14oz) 2 packs of Fullgreen Cauliflower and Broccoli Rice (400g / 14oz)
- 1 tbsp Olive Oil
- 1 large White Onion, thinly sliced
- 2 cloves of Garlic, crushed
- 1 x 200g / 7oz of Green Lentils, drained and rinsed
- 2 tsp Cumin
- 2 tsp Paprika
- ½ tsp Cinnamon
- 2 Cups of Vegetable Broth
- Juice of half a Lemon
- Salt & Pepper to taste
- 1 tsp Fennel Seeds (optional)
- Fresh Coriander, to serve
Method
- 1 Heat a little Olive Oil in a large non-stick frying pan (or Wok!), over a medium/high heat and sauté 1 clove of Garlic for 2 minutes, before adding the Spices, Lentils and Vegetable Stock. Allow to simmer for 30 mins.
- 2 Once the Lentils are cooked, turn the heat down to low and add the Fullgreen Cauli Rice. Mix everything together and season with a little Salt & Pepper.
- 3 Meanwhile, in a separate non-stick pan, over a medium/high heat, add a little Olive Oil and caramelise the sliced White Onions. This should take around 10-15 minutes. Season with a little Salt and Pepper and some Fennel Seeds (optional).
- 4 Serve the Cauli Rice/Lentil mix, topped with caramelised Onions, a handful of freshly chopped Coriander and a generous squeeze of Lemon Juice.
