Ingredients

  • 1 pack of Fullgreen Cauliflower Rice (200g / 7oz)
  • 1 large Cucumber
  • 3.5oz / 100g of Smoked Salmon
  • 1 Avocado, sliced
  • ½ a Red Bell Pepper, sliced
  • 1 Carrot, julienned
  • 1 tsp of Mirin / Rice Vinegar
  • 1 tbsp of Cream Cheese
  • Soy Sauce
  • Chilli Flakes (optional)
  • Sesame Seeds (optional)

Method

  1. 1 Wash and cut the Cucumber in half. Chop-off the 'pointy ends'. Then chop it again, into 3-4 inch length pieces. Hollow these pieces by removing the soft, seedy center.
  2. 2 Chop the Smoked Salmon, Bell Pepper and Carrot into thin slices.
  3. 3 Empty one pack of Cauli Rice into a bowl and add the Cream Cheese and Rice Vinegar. Mix it together gently, making sure all the grains are coated.
  4. 4 Stuff the Cauli Rice mix into these Cucumber pieces and layer the other ingredients on top, until each is fully packed without any gaps. Remember you don't have to use Smoked Salmon and Avo, you can add anything you like)
  5. 5 Slice the stuffed Cucumbers into thin rounds, sprinkle with Sesame Seeds and serve with a dip of Soy Sauce mixed with Mirin and Chilli Seeds
  6. 6 Enjoy!!
